Juan David Puerta runs Finca La Sirena, a family farm outside Armenia, in Quindío. He's a food science engineer by training. After years working in Colombian coffee and a long stretch of fermentation experiments, he came up with his own processing method in 2021.

The farm grows one variety: Castillo. Juan and his partner Geraldine don't go looking for rare ones. They change the coffee through how they process it. That's how one variety on one farm ends up tasting like peach, papaya, apricot, or this time, lychee.

Geraldine makes her own lots now too. One of them won the 2025 Exotic Coffee award in Quindío. We've been working with La Sirena for two years.
